Heat the fryer or a deep pan filled one-third with sunflower oil to 190 degrees. If you don't have a thermometer, you can check the temperature by dropping a piece of bread into the oil. At the right temperature, the bread will brown in 40 seconds.

Peel the onion and cut it into 1 cm thick rings. In a suitable container, sift the flour and make a well in the center. Pour in the sparkling water and quickly mix the batter. Add spices to taste.

Dip the onion rings in batter, lower them into heated oil for 2-3 minutes, and fry until golden brown. Place on a kitchen paper towel to drain.
