Clean and trim the asparagus, then cut it into 4 cm pieces.
- Green asparagus: 2 kg

Heat olive oil in a pan, cut off the crusts from the bread, and send it to fry - cook, flipping the bread for a few minutes until it turns golden on both sides. Remove the bread and set aside. In the pan, add garlic and cook for a few more minutes. Transfer the bread and garlic to a mortar and grind.
- Olive oil: 6 tablespoons
- White bread: 50 g
- Garlic: 2 cloves

Pour the oil from the pan into a pot and heat it. Add the asparagus to the pot and cook for 2-3 minutes. Then remove the pot from the heat and stir in the paprika, adding enough hot water to cover the asparagus. Return the pot to the heat, cover, and simmer for 1 hour on medium heat, shaking occasionally.

Then add vinegar and a little asparagus broth to the mortar, mix, and pour the contents into the pot with asparagus. Season with salt and cook for another 5 minutes. Sprinkle with finely chopped parsley and serve immediately.
