Salted mackerel in tea brine

It sounds surprising, it would seem - where is tea and where is mackerel, nevertheless this method is widespread, and with its help mackerel can be made brighter (although where else can it be more), more tender and more complex.

Thaw the mackerel under running water, cut off the head, and clean out the insides. Then rinse the fish and remove excess moisture with a paper towel.
- Mackerel: 2 pieces

Prepare the brine. Pour 1 liter of boiling water over the tea. Strong tea should be used for the brine, where the thawed mackerel will be placed. Add salt and sugar to the cooled tea. Stir vigorously.
- Black tea: 4 tablespoons
- Water: 1 l
- Sea salt: 4 tablespoons
- Sugar: 4 tablespoons

Place mackerel in a salty-sweet tea brine and keep in the fridge for 4 days. Remove from the marinade, hang over the sink overnight, then wrap in paper and store in the fridge.
