Clean the celery and grate it on a fine grater. Sauté on low heat with butter and water or vegetable broth.
- Celery root: 1 piece
- Butter: 1 tablespoon
- Water: 250 ml

Mix celery with rice and egg, add salt and pepper. Form croquettes about 2 fingers thick.
- Celery root: 1 piece
- Boiled rice: 1.5 glass
- Chicken egg: 1 piece
- Salt: to taste
- Ground black pepper: to taste

Coat the croquettes in breadcrumbs and fry in hot oil until golden brown. Place the cooked croquettes on paper towels to remove excess fat. Serve with a green salad.
