Middle Eastern snack "Mutabal"

Mutabal is a traditional Middle Eastern appetizer originating from Arab cuisine and is a close relative of the famous baba ghanoush. Its base consists of roasted eggplants with a soft texture and a light smoky aroma. Combined with matsoni, sesame seeds, and olive oil, mutabal acquires a rich, creamy flavor with nutty notes. The addition of aromatic and red pepper gives the dish spiciness, while pomegranate seeds add freshness and a slight tanginess. This appetizer pairs perfectly with warm bread that absorbs its rich flavor nuances. Mutabal is often served as part of mezze—a selection of small dishes accompanying main meals in the Middle East. Its simplicity in preparation and exquisite taste make it popular among gourmets as well as in everyday cooking.
