Tomato juice for the winter without a juicer

45 minutes
Tomato juice is a traditional Russian way to preserve the taste of summer tomatoes throughout the winter. This recipe, which doesn't require a juicer, achieves a rich, fresh flavor with a slight tang and natural sweetness. First, the tomatoes are turned into soft puree and then strained to remove the skin and seeds before being gently brought to a boil with salt and sugar. The result is a thick, aromatic juice that perfectly complements winter dishes like borscht, stewed meat or simply as a refreshing drink. It is stored in sterilized jars in a dark cool place to ensure flavor preservation for months ahead. It's not just a drink but the cozy taste of home comfort that conveys the atmosphere of Russian cuisine.
