Rice with vegetables for the winter

Prepare all the ingredients. Soak the rice in cold water for 2 hours beforehand.
- Rice: 250 g

Peel the onion and carrot, then cut them into small cubes.
- Onion: 500 g
- Carrot: 500 g

Cut the tomatoes into small cubes as well.
- Tomatoes: 1.5 kg

Put the vegetables in the pot.

Add vegetable oil, sugar, salt.
- Vegetable oil: 50 ml
- Sugar: 30 g
- Salt: 1 tablespoon

Sauté the vegetables for 5 minutes, then add rice (without liquid) and simmer until the rice is cooked — 20–30 minutes.
- Rice: 250 g

Sterilize jars over steam for 15-20 minutes.

Place the rice with vegetables in hot sterilized jars.

Drop a little vinegar on the lid and seal the jars. Cover the jars with a blanket until completely cool.
- Vinegar 70%: to taste

Store in a dark, cool place. Serve cold or heated.
