Eggplants for winter 'Five' is a traditional Russian appetizer that preserves summer vegetables for the long winter months. The name 'Five' refers to the equal proportions of the main ingredients that create a harmony of taste. Eggplants, tomatoes, sweet peppers, and onions are infused with the aroma of vegetable oil, vinegar, and spices, acquiring a rich, slightly sour taste with a hint of sweetness. This is a versatile preparation – it can be served as an independent appetizer, a side dish to meat or an addition to main courses.
