Highgarden Pavlova

The dessert "Highgarden Pavlova" is a good illustration of the cuisine of one of the seven kingdoms of Westeros. Highgarden is famous for its harvests, and, as a result, they always prepare varied and unusual dishes - like this one. And in the Reach, they have a special love for various sweets. Rose petals, which are added at the last stage of preparation, are not only a symbol of the Tyrell kingdom, imprinted on their coat of arms, but also a bright flavor addition to the recipe, emphasizing its special origin.

Whip six egg whites and three hundred grams of sugar with a pinch of salt until stiff peaks form.
- Egg white: 7 pieces
- Fine white sugar: 400 g
- Salt: pinch

Place two round meringues on parchment and bake in the oven at 120 degrees for one hour.

For the cream, whip the cream with fifty grams of sugar. Then add yogurt and vanilla seeds, and mix.
- Cream 35%: 200 ml
- Fine white sugar: 400 g
- Natural yoghurt: 200 g
- Vanilla pod: 1 piece

Whip the egg white with the remaining sugar. Separate the buds into petals. Brush each petal with egg white using a brush, then dip it in sugar and place it on a baking sheet lined with parchment paper. Send the petals to the oven for 5 minutes at 120 degrees.
- Egg white: 7 pieces
- Fine white sugar: 400 g
- Rose petals: to taste

Remove the pit from the peaches and slice them into wedges.
- Peaches: 4 pieces

Spread the meringue with cream, layer part of the peaches, and cover with the second meringue. Repeat the steps with cream and fruits. Sprinkle the dessert with candied petals. You can drizzle pink syrup on top.
