Baking powder is an important ingredient in the baking world that gives dough lightness and airiness. Its use began in the 19th century when bakers sought ways to improve the texture of baked goods without yeast. This homemade recipe combines baking soda, flour, and citric acid to create an effective mixture for leavening dough. The taste of baking powder is neutral on its own, but its magic occurs during baking when it reacts to form carbon dioxide bubbles. Its application spans a wide range of recipes—from airy sponge cakes to crispy cookies. The main storage condition is dryness; otherwise, the components activate prematurely. Adding a piece of sugar prevents clumping and preserves the quality of the mixture. It is a simple yet indispensable helper for any baking enthusiast.

1
Pour 12 tablespoons of flour into a dry jar. Then add 5 tablespoons of soda and 3 tablespoons of citric acid.
- Wheat flour: 12 teaspoons
- Soda: 5 teaspoon
- Citric acid: 3 teaspoons
2
Mix with a DRY!!! wooden spoon. I emphasize again! The jar and spoon must be dry, otherwise the subsequent ingredients will react immediately, without getting into the dough.
3
Then we tightly close the jar and shake it well to mix all the components evenly!
4
Store the baking powder in a tightly closed jar! It is advisable to put a piece of sugar in the jar to eliminate moisture.
