Melt the butter and cool it to room temperature.
- Butter: 90 g

Preheat the oven to 180°C.

Grease the molds for friands/financiers/cakes with butter.
- Butter: 90 g

Sift all dry ingredients into a bowl.
- Almond flour: 70 g
- Wheat flour: 30 g
- Powdered sugar: 100 g
- Salt: pinch

Whip the egg whites to soft peaks.
- Egg white: 3 pieces

Add oil and half of the egg whites to the dry ingredients, mix.
- Butter: 90 g
- Egg white: 3 pieces

Carefully mix in the second half of the proteins.

Add currants — fresh, frozen (no need to thaw), dried (soak in boiling water first, then dry).
- Blackcurrant: 100 g

Spoon into molds, bake for about 10 minutes (until golden; friands should spring back when pressed)
