Wheat bread

12 servings

195 minutes

Wheat bread is the foundation of Russian cuisine, a symbol of home comfort and simple joys. Its history dates back to ancient times when each family baked bread with their unique recipe. Wheat bread has an airy crumb with a delicate aroma of fresh baking, a slightly sweet taste, and a crispy crust. It pairs perfectly with butter, honey, or traditional Russian soups. This bread can be enhanced with spices or seeds, giving it new flavor nuances. Suitable for breakfasts, lunches, and dinners, its preparation fills the home with coziness and warmth. It is made with patience as each stage is an art of transforming simple ingredients into a fragrant symbol of the home hearth.

Cooking steps
  • 1

In a large bowl, sift the flour, add yeast, salt, and sugar.

    Required ingredients:
    1. Whole grain flour250 g
    2. Wheat flour250 g
    3. Dry yeast7 g
    4. Salt1 teaspoon
    5. Sugar1 teaspoon
  • 2

While continuously mixing, pour in warm water in a thin stream.

    Required ingredients:
    1. Water400 ml
  • 3

Knead the dough until smooth, gather it into a ball. I do this with a silicone spatula. Cover with plastic wrap and make holes in it with a knife all over the surface.

  • 4

Let it rise for 1 hour. My method: I take a container from the multicooker, pour hot water from the tap into it and place it inside, then put a bowl with dough on top. It creates something like a steam bath.

  • 5

After an hour, we knead the dough very intensively to remove all the air from fermentation. At this stage, spices, seeds, etc. can be added. Cover again with plastic wrap and let it rise for another hour. I change the water in the container.

  • 6

After an hour, we knead the dough again actively, divide it into two parts, and shape loaves or place them in oiled and floured molds.

  • 7

We turn on the oven to 220°C.

  • 8

Make sharp cuts on the bread with a knife and let it rise at room temperature for 20 minutes.

  • 9

Place the risen bread in the oven on the middle rack and bake for about 40 minutes; depending on the oven, it may take less or more time.

  • 10

Place the finished bread on a board, cover it with a thin kitchen towel, and let it cool completely.
