Peel the peaches and slice them into 6-7mm thick wedges.
- Peaches: 6 pieces

Heat oil in a pan over medium-low heat and add peaches and syrup. Stir with a wooden spoon for a minute. Continue stirring for another 3-5 minutes, adding spices during the process.
- Vegetable oil: 1 teaspoon
- Maple syrup: 2 teaspoons
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 0.3 teaspoon
- Ground cloves: pinch

Cook the peaches a bit longer until the sauce thickens slightly, then add cornstarch and mix well until lumps dissolve. Cook until the peaches are soft, then remove from heat and let cool completely in the refrigerator or a cool place.
- Cornstarch: 1 teaspoon

Preheat the oven to 190 degrees.

Now you can start the dough because there is no need to cool it like regular pie dough. Mix the dry ingredients in a bowl, then add the butter, rubbing it with a fork until crumbs form.
- Wheat flour: 0.5 glass
- Soda: 0.5 teaspoon
- Vegetable oil: 1 teaspoon

Divide the dough in half, set one piece aside, and roll out the other on parchment paper, covering it with a second sheet and rolling it to the size of the mold (20-25cm). If the dough cracks, add more water and continue kneading. Place the dough in the mold and press lightly. The edges do not need to be trimmed.
- Water: 1 glass

If the filling has cooled, add it to the mold.

Roll out the remaining second piece of dough and place it over the filling with a pattern, or just make a few holes to allow the pie to breathe.

It's not necessary at all, but you can brush the crust with water mixed with brown sugar or cinnamon.

Place the pie in the oven for 35 minutes. The dough should remain soft, otherwise it will be hard to chew.
