Pea dessert with fresh strawberries is an unusual flavor combination born at the intersection of traditional European cuisine and modern culinary experiments. This sweet delicacy surprises with its texture—a delicate pea mass resembling nut paste pairs with vibrant, fresh strawberry puree. Light coconut flakes and walnuts add subtle exotic notes to the dessert, while vanilla imparts a refined sweetness. Historically, peas were used in baking as an alternative to flour, making such dishes accessible and nutritious. Today, this dessert is a wonderful choice for gourmets seeking original flavor combinations. It is perfect for serving chilled, preserving freshness and richness of taste. An ideal final chord of the meal that impresses with its balance of sweetness and tenderness.

1
Grind the dry peas in a blender as finely as possible. The grains should be the size of sugar crystals. The smaller, the better.
- Peas: 250 g
2
Melt butter in a pan, add pea flour, and fry on medium heat for 20 minutes. Then add 2 tablespoons of coconut flakes, chopped walnuts, and vanillin. Fry for another 10 minutes.
- Butter: 200 g
- Coconut flakes: 3 tablespoons
- Walnuts: 2 tablespoons
- Vanillin: 1 teaspoon
3
Add powdered sugar, mix, transfer to a baking sheet and bake for another 15 minutes. The mixture should brown and taste like nut paste with no pea flavor at all. Let it cool.
- Powdered sugar: 1 glass
4
Transfer the cooled mass to a blender, add a little water, and puree. You need very little water, just enough to soften the mass without making it too liquid. The consistency should be like very thick crystallized honey.
- Peas: 250 g
5
Make a puree from fresh strawberries separately in a blender.
- Strawberry: 250 g
6
Place the pea dough in a container. Pour strawberry puree on top and decorate with coconut flakes. Optionally, you can decorate with whipped cottage cheese or cream. Refrigerate for a few hours for proper setting.
- Coconut flakes: 3 tablespoons
