Soda-based cottage cheese kulich is a delicate and aromatic treat that embodies the traditions of Russian cuisine. This recipe, rooted in ancient home cookbooks, is characterized by its softness and airiness due to the cottage cheese and soda reacted with lemon juice. Its taste is gentle, with a light creamy note, sweetness from raisins, and a vanilla aroma. It pairs wonderfully with glaze or cream, adding festivity. Kulich makes a great addition to the Easter table but can also be served at family tea gatherings. The ease of preparation makes it accessible even for novice cooks, while its rich ingredients make it healthy and nutritious.

We take the mold we are going to bake in and cut a circle from paper for the bottom. If you are 100% sure of your mold or have a removable mold, you can skip this step.
6
Place a paper circle at the bottom of the mold. Generously grease the bottom and sides of the mold with butter.
- Butter: 150 g
7
Fill the mold 2/3 with dough. The dough fits well, so we don't put in too much. Place it in a preheated oven at 180 degrees for about 45 minutes.
