Place the sifted flour, diced butter, 50 grams of sugar, yolk, and 1 tablespoon of cold water in a large bowl and knead until smooth.

Preheat the oven to 180 degrees, place a baking tray inside (the pie should be placed on a hot tray). Roll out the dough into a thin layer (if rolling is difficult, simply spread it in the form and level it), place it in a low baking dish so that the bottom and sides are covered, make frequent holes in the surface with a fork, and refrigerate for 30 minutes. Then transfer to the oven for 20 minutes. Remove the dough with the tray and increase the oven temperature to 200 degrees.

Wash the pears, cut them in half lengthwise, and remove the core. Slice the pear halves into thin longitudinal pieces while keeping their original shape. Sprinkle the prepared pie base with corn flour. Using a wide spatula, place the sliced pears on the dough, slightly shifting the slices by hand to create a ridged surface.
