Dietary cheesecake with topping is a refined treat that combines lightness and rich flavor. Its base of oats, bran, and dates makes it healthy, while the cottage cheese-yogurt mixture adds tenderness. Thanks to the use of stevia, the dessert remains low-calorie while retaining its sweetness. The finishing touch is a currant topping with gelatin that adds sweet-sour notes. Historically, cheesecake originated from European cuisine but is reimagined here in a lighter version. It is enjoyed as a dessert after lunch or a light snack. It pairs wonderfully with fruits, herbal tea, or coffee, and its airy structure makes it ideal for those watching their diet but not wanting to give up pleasure.

For the test, grind oatmeal and bran into flour, make a puree from dates (by the way, they can be replaced with any dried fruits), mix everything with an egg and stevia, the dough should hold its shape, although it may remain sticky, place it in a form on oiled parchment paper, making edges. Comment: powdered stevia extract (with a sweetness coefficient of 250) on the tip of a knife in the dough and about 1/3 tsp in the cottage cheese mass.
- Oat flakes: 0.8 glass

For the filling, separate the egg whites from the yolks, blend the yolks well with cottage cheese, sour cream, yogurt, and stevia; you can add vanilla but ensure there are no lumps or grains in the mixture (at all!).
- Egg yolk: 2 pieces
- Soft low-fat cottage cheese: 400 g
- Sour cream 10%: 100 g
- Yogurt: 50 g
- Stevia extract: to taste

Whip the egg whites to peaks and gently mix with the cottage cheese mass, pour everything onto the base, cover with foil, and place in a preheated oven at 160-170 degrees for 40 minutes.

For the topping, I used frozen currants, which I boiled for 5 minutes (the so-called five-minute rule) with sugar and cinnamon. I soaked the gelatin beforehand, and when it swelled, I slightly heated it in the microwave, poured it into the pot with currants, and stirred until dissolved. I poured the berries with syrup over the finished pie and put it in the fridge.
- Frozen berries: 0.5 glass

It goes great even without topping, you can just make it with fruits, I'm sure it will be just as good!
