Puff pastry pies "Cherry on cognac"

Cherry on Cognac puff pastries are a refined treat filled with the aroma of vanilla and the tart taste of flambéed cherries. Preheat the oven to 200 degrees Celsius. Prepare the filling. In a medium heated pan, add cherries and simmer for 5 minutes. Add sugar to taste (depending on the acidity of the cherries), and simmer for another 5 minutes.
- Frozen cherries: 300 g
- Sugar: to taste

Add cognac (preferably French) and flambé. Set aside the finished filling.
- Cognac: 50 g

Roll out the puff yeast dough to a thickness of 5 mm, dusting it with flour. Cut the rolled dough into portioned squares of approximately 12x12 cm. You should get about 8.
- Yeast puff pastry: 500 g
- Vanilla pod: 1 piece

Place 1 tablespoon of filling in the center of the prepared dough squares.
- Frozen cherries: 300 g

Grease the perpendicular edges of the square with egg yolk and seal the pie into a triangle. Repeat steps 4 and 5 with all squares;)
- Egg yolk: 2 pieces

Place the prepared pies on a baking sheet (prepare the sheet by greasing it with a little vegetable oil and dusting it with a thin layer of flour). Let the pies rest for 15-30 minutes for the dough to rise better.

Brush the surface of the pastries with the remaining egg yolk and place in the oven for 15 minutes until a brown crust forms. Done;)
