For the yogurt base, in a small saucepan, mix the remaining milk, cream, sugar, salt, agave syrup, and the zest of 1 grapefruit, place on heat and bring to a boil. Remove from heat, cover, and let sit for 10 minutes. Then strain to remove the zest, return the mixture to heat, bring it almost to a boil, pour in the starch milk, and cook over medium heat, stirring constantly until thickened. Remove from heat, add yogurt and grapefruit syrup, and mix until smooth. Cool to room temperature, then refrigerate overnight.

Freeze in the freezer for ice cream according to the instructions. Transfer the frozen yogurt to a clean container, layering yogurt and meringue crumbs (about 10-15 whole meringues). Place in the freezer for at least 4 hours until set.
