Rub 100 g of soft butter into crumbs with flour.
- Butter: 150 g
- Wheat flour: 250 g

Add sugar (50 g) and an egg to the resulting oily-flour mixture. Knead the dough. The dough should be soft, lump-free, and feel like plasticine. Place the dough in the refrigerator while preparing the filling.

Peel the apples, and cut them into wedges (or squares, whichever you prefer).

Fry the prepared apples in 50 g of butter with 50 g of sugar for 5-7 minutes.

Roll out the chilled dough into a large pancake (the amount of dough yields a pancake about 30 cm in diameter). I roll it out directly on baking paper.

Spread cottage cheese on the finished pancake (leave 2-3 cm without filling for folding), top with caramelized apples and sprinkle with fresh thyme leaves (use a little thyme, as it can overpower the flavor). Fold the edges and place in a baking dish.

Send the galette to a preheated oven at 200 degrees. Bake until done, about 20-25 minutes.
