Semolina cake is a cozy memory of home warmth and Russian cuisine. Its roots go back to the traditions of making simple yet incredibly tasty pastries from accessible ingredients. Tender and porous with a slight sour-milk hint from kefir, it delights with its softness and airy texture. Sweet but not cloying, it pairs perfectly with tea or coffee. Thanks to semolina, the cake gains a special density while remaining light. It is often complemented with vanilla, fruits or nuts to enrich the flavor even more.
