Curd pancakes without flour

Cottage cheese pancakes without flour are a delicate and light dish of Russian cuisine, perfect for breakfast or dessert. Their history traces back to traditional Russian syrniki, but this recipe excludes flour, making the dish airier and healthier. The cottage cheese gives the pancakes softness and a slight tanginess, while the addition of corn starch provides structure without weighing them down. A light sweetness (or its absence – to taste) allows for experimentation with toppings: fresh berries, honey or sour cream. The simplicity of preparation makes them accessible even for beginners in the kitchen – just mix the ingredients, add boiling water and brown in a pan. Vanilla and cinnamon will add aroma, turning breakfast into a true morning delight!
