Soak the raisins in warm water for 10-15 minutes. Then drain the water and place the raisins in a colander.
- Dark raisins: 2 tablespoons

In a large bowl, mix flour, oats, baking powder, lemon zest, and cinnamon.
- Wheat flour: 0.7 glass

Grate one whole apple on a fine grater into puree, and cut half of the apple into cubes. Drizzle both parts with lemon juice.

Mix apple puree with vegetable oil and honey (can be replaced with maple syrup or sugar). Add the mixture to the flour. Stir.

Add raisins, apple cubes, and nuts to the prepared dough. Mix and let the dough rest for 15 minutes. It should not be dry but also not liquid.
