The 'Tortellini di pane' bread-dumplings by the Simili sisters are an original culinary masterpiece that combines delicate yeast dough with flavorful meat filling. This recipe is inspired by European culinary traditions where bread and meat form the basis of many national dishes. The taste of these dumplings surprises with its harmony: the crispy crust reveals a juicy filling with notes of feta cheese, herbs, and spices. The uniqueness of the dish lies in its versatility—it is suitable for both a cozy home dinner and a festive table. The cooking process brings special joy: rolling out the dough, shaping neat dumplings, and baking them to a golden crust. Tortellini di pane embodies comfort and warmth wrapped in crispy dough that will delight you and your loved ones.

1
Dissolve the yeast in warm water, add salt, sugar, flour and knead the dough. When the dough stops sticking to your hands, leave it in a bowl, cover it and place it in a warm place for 1 hour.
- Dry yeast Dr.Oetker: 10 g
- Water: 220 ml
- Salt: 1 teaspoon
- Sugar: 1 teaspoon
- Wheat flour: 500 g

While the dough rises, we prepare the filling. You can use any minced meat you like. I have chicken fillet + additionally salt and pepper to taste. Chop the onion finely/coarsely (to your taste) and add it to the minced meat, along with grated hard cheese, feta, and finely chopped herbs. Add salt and pepper to taste. Mix everything. You can fry the minced meat if desired, but then the filling won't be juicy.
- Ground meat: 300 g
- Onion: 1 piece
- Cheese: 20 g
- Parsley: 10 g
- Feta cheese: 80 g
- Salt: 1 teaspoon
- Salt: 1 teaspoon

We divide the prepared dough into parts and roll it out. We cut out 10x10 cm squares. I used a ruler. Cooking is a whole geometry.
4
Place a tablespoon of filling on each square. Make a triangle. Wrap it like a dumpling.
5
Place on a baking sheet lined with parchment paper, brush the bread with olive oil on top, and bake in a preheated oven at 200 degrees for 30-40 minutes.
- Olive oil: 25 ml

We take out the ready bread.
