Apple tart tatin with lemon zest and cinnamon

Tarte Tatin is one of the legends of French cuisine, with a history that began in the late 19th century thanks to the Tatin sisters. The accidentally flipped apple pie became a gastronomic masterpiece. In this version, the addition of lemon zest and cinnamon gives the dessert a special aroma. The crispy crust contrasts with the tender caramelized apples, creating a perfect blend of sweetness and slight tartness. It is served warm, accompanied by a scoop of vanilla ice cream or thick cream, enhancing the flavor even more. This pie is ideal for cozy family tea times or festive dinners, impressing with its exquisite appearance and rich flavor nuances.

We take a large bowl for mixing the dough. Sift 250 g of flour, make a well, add a pinch of salt, 1 tablespoon of sugar, and 1 yolk.
- Wheat flour: 250 g

- Sugar: 6 tablespoons
- Egg yolk: 1 piece

Next, take 125 g of cold butter, cut it into large pieces, and add it to the flour. Then mix well with your hands.

Add 2 teaspoons of cold water to gather the dough into a single mass and prevent it from sticking to your hands and the sides of the bowl.

We put the dough in the cold for 20 minutes.

We peel 1 kg of apples and remove the seeds. We cut the apples into 4 pieces.
- Green apples: 1 kg

Arrange the apples in a circle in the baking dish. Sprinkle with cinnamon and lemon zest on top.

Then, in a heated pan, we start adding sugar (a little at first to prevent the bottom layer from burning and clumping), stirring and gradually adding more sugar to make caramel. Sugar should be melted over low heat to prevent the caramel from boiling, as it will become bitter and your pie will taste bad.
- Sugar: 6 tablespoons

We pour hot caramel over the apples.

We take the remaining 125 g of butter and place it in small square pieces on top of the apples and caramel.

Take out the dough and roll it out. Place apples on top and shape the sides. Make holes in the dough for steam to escape.

Place the pie in an oven preheated to 200 degrees. Bake for 25 minutes.

Take it out of the oven and flip it so the apples are on top.
