Thaw the strawberries, puree them with a blender, add gelatin to the puree, and let it sit for a while to swell.
- Frozen strawberries: 250 g
- Gelatin: 10 g

Heat the strawberry mixture in a water bath until the gelatin dissolves, then cool the mixture to room temperature.

Add lime juice and mix with a mixer for about 57 minutes. The mixture will increase, lighten by a few shades, and become enriched with oxygen.

Pour the strawberry puree into a mold and place it in the refrigerator until set, then remove the soufflé from the mold and cut it into cubes.
