Sweet rolls with raisins made from potato yeast dough are a true embodiment of home comfort and culinary creativity. Their recipe is rooted in European baking traditions, where potatoes were used to add softness and airiness to the dough. The delicate structure of the rolls, rich in creamy flavor and subtle sweetness of raisins, makes them perfect for morning coffee or cozy tea time. The potato in the dough not only enriches the texture but also retains moisture, ensuring delightful softness for the rolls. They pair wonderfully with jams or butter, adding warmth and flavor to any moment. Baking them fills the home with an aroma that evokes memories of family traditions and a warm hearth.

1
Prepare potato yeast dough: dissolve dry yeast in 1.5 cups of milk, add 250 g of flour. Leave the mixture in a warm place for about 1 hour.
- Milk: 1.5 glass
- Dry yeast: 7 g
- Wheat flour: 650 g
2
Boil the potatoes and mash them in a blender.
- Potato: 3 pieces
3
When the dough rises, add 2 tablespoons of melted butter, 3 eggs, 0.5 tablespoons of sugar, 0.3 teaspoons of salt, mashed potatoes, mix everything well, and add the remaining flour. Knead the dough (to prevent it from sticking to your hands, grease your hands with sunflower oil). The dough should be smooth. If the dough is not uniform and smooth with this amount of flour, add more flour. Leave the dough in a warm place for about 3 hours.
- Melted butter: 5 tablespoon
- Chicken egg: 1 piece
- Sugar: 0.5 tablespoon
- Salt: 0.3 teaspoon
- Potato: 3 pieces
- Wheat flour: 650 g
- Sunflower oil: 3 tablespoons
4
Add raisins to the dough and mix.
- Seedless raisins: to taste
5
We beat 2 eggs.
- Chicken egg: 1 piece
6
We melt 3 tablespoons of butter.
- Melted butter: 5 tablespoon
7
From the prepared potato yeast dough, we shape rolls, brush them with beaten egg and melted butter. The rolls should be generously coated with melted butter, so if the specified amount of melted butter (3 tablespoons) is not enough, melt more butter.
- Chicken egg: 1 piece
- Melted butter: 5 tablespoon
