Water pancakes are a classic and simple version of a traditional Russian dish, light, airy, and with a delicate taste. This recipe has a long history as pancakes in Russia are considered symbols of the sun and comfort. The absence of milk makes them lighter while remaining aromatic due to the combination of sugar, eggs, and butter. They are perfect as a standalone dish or as a base for sweet and savory fillings: jam, sour cream, honey, or even fish. They fry quickly and their golden crust pleases the eye and palate. Suitable for breakfast or festive tables. The simplicity of preparation makes them accessible to everyone while their pleasant taste evokes cozy family evenings.
