Apple pastries are a classic of Russian cuisine, combining tender cottage cheese dough with fragrant apple filling. We mash the cottage cheese with a fork and mix it with 2/3 cup of sugar, beat it, add 3 eggs, melted margarine, and beat again. We mix the flour with the baking powder and gradually add it to the cottage cheese mixture. We knead the dough, make a ball from it, wrap it in cellophane, and place it in the refrigerator for 30 minutes.
- Cottage cheese: 200 g
- Sugar: 1 glass
- Chicken egg: 3 pieces
- Margarine: 125 g
- Wheat flour: 300 g
- Baking powder: 1 teaspoon

Meanwhile, we remove the seeds from the apples and cut them into small cubes, then sauté them in butter for 5 minutes. After that, we add 3 tablespoons of sugar and mix everything thoroughly.
- Apple: 4 pieces

- Sugar: 1 glass

Take the dough out of the fridge and roll it out to a thickness of about half a centimeter. Cut out circles with a glass, place a teaspoon of apples in each, and pinch the edges. Place the pastries on a greased or parchment-lined baking sheet, press the edges with a fork to prevent the filling from leaking, and brush the top with beaten egg. Bake at 180–200 degrees for 20–30 minutes.
