In a deep bowl, mix flour, 1 tablespoon of sugar, salt, ground ginger, and nutmeg. Add 100 g of diced butter, and crumble the butter with the flour using a fork. Add ice water to the dough by the tablespoon (it can be a little more than specified: the main thing is that the dough doesn't fall apart in the end), knead the dough, form a ball, wrap it in film, and refrigerate for half an hour to an hour.
