Mix 100 grams of butter, 150 grams of flour, and 50 grams of sugar with a fork until crumbly. Add the yolk and knead with hands until a soft ball forms. Wrap the ball in plastic and refrigerate for an hour.

Take the dough out of the fridge and roll it to the size of the mold, ensuring that the edges are 3 cm high, and evenly spread it by hand across the mold and edges (Fig. 4).

Peel and slice the apples into thin rounds. Place them in the prepared dough form. Sprinkle with sugar and cinnamon. Top with a crumbly topping so that the apples are not visible.
