Grated pie with berries

Berry crumble pie is a traditional dessert of Russian cuisine filled with the warmth of home baking. Its roots go back to ancient culinary traditions when housewives used available ingredients to create simple yet surprisingly delicious dishes. This pie combines a crunchy streusel topping with juicy berries, creating a magnificent balance of textures and flavors. The sweetness of the dough is accentuated by the slight tartness of the berries, while the aroma of vanilla and lemon zest makes it even more appealing. We prepare the dough for the base. Whisk 100 g of melted butter with an egg and 75 g of sugar until smooth. Add 225 g of flour sifted with salt and baking powder, and knead into a uniform dough. You can also add vanilla sugar and grated lemon zest.
- Butter: 250 g

- Sugar: 200 g
- Wheat flour: 500 g
- Salt: pinch
- Baking powder: 0.5 teaspoon

Grease the mold with oil and line it with parchment (my mold is 24x24 cm). Pour the dough in and spread it evenly across the bottom.

Place in a preheated oven at 180 degrees and bake for 15 minutes. Remove and let cool slightly. Optionally, you can moisten the cake with 'Amaretto' liqueur or cognac (just don't overdo it, a light spray is enough).

We place berries (300 g) on the cake layer and sprinkle them with sugar (about 2 tablespoons). Additionally, a bit of raspberry jam can be added.

Preparing streusel. Mix flour (225 g) and sugar (75 g), add diced cold butter (150 g), and rub with fingers until it resembles coarse crumbly texture. Sprinkle the crumb over the berries. You can also add vanilla sugar and grated lemon zest.

- Sugar: 200 g
- Butter: 250 g

Place the pie in the oven and bake for another 25-30 minutes, until a golden crust forms on the streusel.

Let the pie cool to room temperature, slice it, and serve.
