Tender tvorozhnik is an exquisite dessert of Russian cuisine that combines an airy cottage cheese texture with the light sweetness of fructose. For the test, we add baking powder and 1.5 tablespoons of fructose to the flour.
- Wheat flour: 1 glass
- Baking powder: 2 teaspoons

Add 1 egg yolk and finely chopped butter to the obtained mixture.

Mix thoroughly by hand. Add 1 tablespoon of water. Knead the dough. It should become shiny and elastic.

We place the prepared dough in the refrigerator for 20-30 minutes.

For the filling, we separate the yolks from the whites.

Beat the yolks with 3 tablespoons of fructose (more or less to taste) and vanilla.

Add cottage cheese to the yolk mixture and beat with a mixer on low or medium speed until a smooth mass is obtained.
- Cottage cheese 9%: 500 g

Whip the egg whites until thick airy foam (about 2-3 minutes).

We add whipped egg whites to the obtained yolk-curd mixture.

!!!Carefully!!!! Slowly!!! Stir with a SPOON!!! (this is very important, otherwise the cheesecake won't be tender and airy).

Spread the dough, form the edges. Add the filling. Preheat the oven to 180 degrees and place our cheesecake for 30-40 minutes. The filling will rise and a golden crust will form on top.
