Nuts in caramel

Caramelized nuts are a refined treat rooted in Russian culinary traditions, where caramel symbolized sweetness and celebration. Crunchy hazelnuts and almonds are coated in thick amber caramel made from cane sugar and lemon juice. This dessert has a deep, rich flavor with pleasant nutty notes and a slight tartness that balances the sweetness. Perfect with tea or coffee, it can be enjoyed on its own or as a decoration for pastries. Its simplicity makes it accessible even for novice cooks, while the result consistently delights the eyes and taste buds. Caramelized nuts are not just a sweet treat but a true pleasure that reveals the full charm of caramel and nuts.

We make caramel from sugar and juice. Do not place it on the hot stove immediately — let it gradually heat up, do not stir. After it acquires a copper color, add nuts, mix, and pour into molds on a silicone sheet (I have round rings with a diameter of 75 mm — it makes 8 pieces of 50 grams each).
- Cane sugar: 200 g
- Lemon juice: 30 ml
- Hazelnut: 100 g
- Almond: 100 g

We leave it until it hardens.
