Preheat the oven to 200 degrees. Place non-stick baking paper on the baking tray and sprinkle with flour (specifically on the area where the bread will be placed, otherwise the flour will burn and smoke).

Place all dry ingredients except for baking soda and baking powder in a large deep container. The following set of components should result: wheat flour / rye flour / flaxseed flour / wheat sprouts / 7-grain flakes / fiber / salt / cane sugar / turmeric / ground ginger / ground nutmeg.
- Wheat flour: 250 g
- Rye flour: 250 g
- Flaxseed flour: 50 g
- Wheat sprouts: 25 g
- 7 grain flakes: 50 g
- Fiber: 2 tablespoons
- Salt: 2 teaspoons
- Cane sugar: 1 tablespoon
- Turmeric: 1 teaspoon
- Ground ginger: 1 tablespoon
- Ground nutmeg: pinch

Add mustard to the kefir and mix. Then add baking soda and baking powder, mixing until foam starts to form.
- Kefir: 550 ml
- Grainy mustard: 3 tablespoons
- Soda: 1 tablespoon
- Baking powder: 1.5 teaspoon

Add kefir to the container. Chop the nuts and dried fruits, and grate the lemon and orange zest. Add these ingredients and honey to the container.
- Kefir: 550 ml

- Dried fruits: 100 g
- Lemon zest: 10 g

- Honey: 3 tablespoons

Mix by hand until a homogeneous consistency is achieved (the dough will be very sticky!). Sprinkle flour on top of the dough, turn it over, and sprinkle underneath. Divide into several parts. Shape the bread.

Place on a flour pillow on the baking tray.

Bake in the oven for 25-30 minutes until the bread sounds hollow when tapped.

Separate the egg yolk from the white. Whisk the yolk with milk until smooth.

5 minutes before it's done, brush the bread with a mixture of yolk and milk, sprinkle with sesame seeds. Bake until a crispy golden crust forms.
