Make a hole in the center of the flour in a bowl and add yeast, pouring warm water over it. Stir to dissolve the yeast. Add oil, 2 eggs, and half of the zest.

Knead the dough by hand. Place it in an oiled bowl and cover with a clean towel or plastic wrap to let the dough rise double in size. Put it in a warm place.

While the dough rises, let's prepare the cottage cheese filling. In a bowl, mix cottage cheese, raisins, remaining sugar, egg, and half of the zest. Mix until smooth. Place in the refrigerator. Preheat the oven to 180 degrees.

When the dough has risen, roll it out. Cut the dough into squares with a sharp knife.

Fill each square with 2 teaspoons of cottage cheese mixture. Close it like an envelope. Brush all the buns with egg yolk and let them rest for 10 minutes before placing in the oven, so they settle a bit.
