Soak the gelatin in 0.5 cup of cold water.
- Gelatin: 25 g
- Water: 0.5 glass

Place sugar and water in a pot, stirring, boil for 10 minutes on low heat, then add baking soda and citric acid, mix well, and boil for another 7 minutes while stirring.
- Sugar: 2.5 glasss
- Water: 0.5 glass
- Soda: 0.5 teaspoon
- Citric acid: 0.5 teaspoon

Remove from the stove, pour into the mixer bowl, add soaked gelatin, and whip starting at low speed and gradually increasing to the highest. The marshmallow will begin to thicken.
