Preheat the oven to 180 degrees. Grease the baking pan with butter.
- Butter: 40 g

For the filling, peel and core the apples, then cut them into cubes. In a pan, melt the butter, add the apples, sprinkle with sugar and cinnamon, and add orange and lemon juice (it's important not to have excess liquid). Simmer the apples over medium heat until soft (10-15 minutes), stirring a couple of times.
- Green apples: 8 pieces

For frangipane, beat the butter with sugar until fluffy, adding eggs one at a time and mixing until smooth (it's okay if the butter starts to separate). Add citrus zest and ground almonds, mixing until smooth.
- Butter: 40 g

- Chicken egg: 3 pieces
- Lemon zest: 0.5 piece
- Orange zest: 1.5 piece
- Ground almonds: 180 g

Place apples at the bottom of the mold, then spread frangipane on top and smooth it out. To prevent the frangipane from burning, cover it with foil; after 20 minutes remove it and bake for another 20-25 minutes (you can first turn on the bottom heat for 10 minutes and then bake in convection mode; at the end turn off and let it rest in the oven).
