Tart with cottage cheese and cherries

Cheese and cherry tart is a refined combination of tenderness and vibrant flavor. Its roots trace back to European culinary traditions, where thin pies with fruit and cheese fillings have long captured the hearts of gourmets. The light oat base, slightly crispy at the edges, serves as a perfect frame for the velvety cheese and juicy sweet-sour cherries. Honey adds a warm, natural sweetness that enhances the contrast between the softness of the cheese mass and the rich berry flavor. This tart is perfect for both cozy family tea times and exquisite dinners. Its natural sweetness makes it an excellent choice for those who prefer healthy desserts without excess sugar.

1
First, you need to prepare the base. For this, grind the oats in a coffee grinder.
- Oat flakes: 200 g
2
Mix them in a bowl with two egg whites and water. It will result in an elastic dough. Let it sit for 10 minutes for the oats to swell a bit.
- Egg white: 3 pieces
- Water: 8 tablespoons
3
After that, place the dough in a baking dish lightly greased with olive oil. Carefully level it out and form the edges. Prick the base all around with a fork to prevent bubbles from forming, and send it to a preheated oven at 175 degrees for 15 minutes.
- Olive oil: 1 tablespoon
4
While the base is baking, melt the honey.
- Honey: 70 g
5
Mix frozen cherries with half of the honey. (If you're afraid that the cherries will release a lot of juice while baking, which is likely, it's better to thaw them first.)
- Cherry: 350 g
- Honey: 70 g
6
Mix the remaining honey with egg white and cottage cheese in a separate bowl.
- Honey: 70 g
- Egg white: 3 pieces
- Cottage cheese: 250 g
7
Slightly cool the prepared base, spread the cottage cheese mixture evenly on it. Carefully place cherries on top.
- Cottage cheese: 250 g
- Cherry: 350 g
8
Place the tart in the oven and bake for about half an hour at 175 degrees.
