Classic Eton mess is the embodiment of elegant messiness. Originating from England, this dessert is named after the famous Eton College, where it served as a sweet symbol of celebrations. Airy meringue, light whipped cream, and juicy strawberries together create textural perfection: crunchy, delicate, and refreshing. The flavor of this dessert is a harmony of sweetness and slight tartness, where caramel notes of meringue resonate with velvety cream and juicy berries. Eton mess does not require perfect form—its charm lies in the natural chaos of presentation, whether in a tall glass or a cozy plate. Simple yet exquisite, it is perfect for family evenings and festive treats, embodying gastronomic comfort and genuine joy of taste.

1
Preheat the oven to 100 degrees. Line two baking trays with parchment paper.

In a bowl, combine room temperature egg whites and a pinch of salt. Whip for 2-3 minutes with a hand mixer on low speed. When most of the transparent substance is slightly foamy, increase the speed and continue whipping, gradually adding sugar. Add vinegar and whip until stiff peaks form. Carefully transfer the whipped egg whites to a piping bag or a clean plastic bag with the tip cut off and pipe small meringues onto baking sheets. Alternatively, simply form meringues with a tablespoon and place them on the sheets 1.5 cm apart. Bake in the oven for one and a half hours, then remove and cool on a rack. Then cool at room temperature for an hour.

And finally, assemble the dessert! Just wash the strawberries, remove the stems, and chop them randomly. Mix them randomly with whipped cream, and crumble the cooled meringue on top with your hands. If you're using champagne glasses, you can continue layering until you get tired or run out of ingredients. In a soup plate, it will also look cute, though not as impressive. After all, Eton mess is Eton mess; it doesn't have to look neat. If such a mix has gained popularity in England, there must be a reason.
- Strawberry: 800 g
