Fruit pie is a true embodiment of home comfort and tenderness. This dessert from Russian cuisine delights with a combination of airy dough, sweet fruits, and soft creamy filling. It evokes nostalgia for family tea gatherings when the aroma of fresh baking filled the home. The fruits baked in the dough reveal their juiciness, while the sour cream filling gives the pie a velvety texture. It pairs perfectly with morning coffee or evening tea. The versatility of the recipe allows for experimentation with fillings—apples, pears, berries, or even exotic fruits make worthy choices. Its simplicity in preparation makes the pie a favorite treat for cozy family gatherings as well as festive feasts.

1
For the test, mix the butter with sugar (to taste — I usually add a couple of tablespoons), one egg, and add flour with baking powder.
- Butter: 100 g
- Sugar: 0.5 glass
- Chicken egg: 2.5 pieces
- Wheat flour: 1.5 glass
- Baking powder: 1 teaspoon
2
For the filling, mix sour cream, one egg, and sugar (3-5 tablespoons, depending on the sweetness of the fruits).
- Sour cream: 2 tablespoons
- Chicken egg: 2.5 pieces
- Sugar: 0.5 glass
3
Place the dough in a rimmed pan, brush the bottom with egg white (to prevent the juice from softening the dough and ensure it bakes). Arrange the fruits on the edges and bottom in an artistic mess.
- Chicken egg: 2.5 pieces
- Fruits: 500 g
4
Place in a preheated oven at 180 degrees for about 40 minutes until the dough is ready.
5
5 minutes before fully ready, pour the fruits with the filling and send them back to the oven for another 5-10 minutes until set.
