Peel the pears and remove the core, carefully taking them from the bottom, leaving the stems. Place the pears in a saucepan. Pour in about 4 cups of water to completely cover the pears, add sugar, a cinnamon stick, 2 pieces of zest, honey, and lemon juice. Scrape the seeds from the vanilla pod and add them to the saucepan along with the pod. Bring to a boil and let the sugar dissolve. Reduce the heat and simmer until soft for about 10 minutes.
