Preheat the oven to 200 degrees.

In a small bowl, mix cinnamon and sugar.
- Ground cinnamon: 0.5 teaspoon
- Sugar: 6 tablespoons

Place the dough on a floured surface and sprinkle with 2 tablespoons of sugar mixture, then roll it out carefully. Cut into 7 cm squares. Place on a lined baking sheet, cover with another sheet of parchment, and refrigerate for 15 minutes.
- Wheat flour: to taste

Send to the oven for about 30 minutes until cooked and golden brown. Remove the top parchment and transfer the squares to a second parchment on a rack to cool.

Meanwhile, melt the butter in a saucepan over medium heat. Peel the apples and remove the cores, then slice them thinly. Place them in the saucepan and cook, stirring, for 7 minutes. Add the remaining sugar mixture and cook until the apples are completely soft. Cool.
