Melt the butter in a pot, add cream, sugar, and syrup. Cook uncovered, stirring occasionally. Cooking time is 20-30 minutes, depending on the pot size (the wider it is, the less time). The mixture becomes stretchy when the temperature reaches 124 degrees.
- Butter: 50 g
- Cream 40%: 300 ml
- Sugar: 300 g
- Sugar syrup: 100 ml

Grate the zest of one orange on a fine grater and add it to the caramel. The chocolate can be grated or simply broken and added to the caramel. Remove the pot from the heat — the chocolate should not boil. Stir the caramel until the chocolate is completely melted.
- Orange zest: 1 piece
- Dark chocolate: 100 g

Place greaseproof paper in the mold (approximately 18x20 cm). Pour the caramel into the mold and wait for it to cool slightly.

Cut into pieces approximately 1.5x4 cm. Place in the refrigerator until completely cool.
