Grape Pie

Grape pie is an exquisite dessert of Spanish cuisine, combining the tenderness of dough and the juiciness of grapes. Its history roots in the traditions of Mediterranean pastry chefs who valued the simplicity and natural taste of seasonal products. The airy dough, enriched with butter and olive oil, gains a special aroma from vanilla and citrus zest. Baked grape berries reveal their sweetness, creating a harmonious balance of flavors. This pie is perfect for cozy family tea times or as a refined finish to a festive meal. It requires no complex cooking techniques, yet each slice envelops you in the warmth and sunny mood of Spain.

1
Whisk the eggs with sugar for at least 8 minutes.
- Sugar: 270 g
- Chicken egg: 4 pieces
2
Add butter and olive oil, continue to whisk.
- Butter: 180 g
- Olive oil: 100 ml
3
Then pour in the milk and add vanilla or vanillin.
- Milk: 150 ml
- Vanilla pod: 1 piece
4
Sift the flour with the baking powder and add to the mixture, gently mixing with a spatula.
- Wheat flour: 400 g
- Baking powder: 1.5 teaspoon
5
Add the zest of orange and lemon. Let the dough rise for 10 minutes. Then, if you are baking in a pan that does not require flipping the pie, add half of the grapes. If the pan is rigid and intended to be flipped upside down, add all the grapes.
- Grated lemon zest: 2 g
- Grated orange zest: 2 teaspoons
- Grape: 500 g
6
Place the dough in a mold (diameter at least 28 cm) and send it to a preheated oven at 180 degrees for 10 minutes. After this time, slightly pull out the mold with the future pie and sprinkle the remaining grapes. This is, of course, if the pie will not be turned over when removing from the mold. If we added all the berries at the beginning, continue baking without interruption. Bake for another 45 minutes.
- Grape: 500 g

If the top is already very browned and time is not up, cover it with foil.
