Bread with pistachios and wild garlic

A lot depends on the pistachios here: they must be fresh and fragrant. Only then will they be able to unite with the wild garlic into an interesting alliance.

Chop the nuts and finely chopped ramson in a food processor.
- Pistachios: 30 g
- Wild garlic: 60 g

In a bowl, mix warm water, yeast, and sugar. Let it sit for 15 minutes.
- Water: 1.5 glass
- Fresh yeast: 40 g
- Sugar: 1 teaspoon

In another bowl, mix flour and salt. Then add yeast and ramson with nuts. Knead the dough for at least 10 minutes: this affects the bread's airiness. Then place the dough in a warm place for 1.5 hours to rise (the dough should double in size).
- Wholemeal flour: 500 g
- Salt: 2 teaspoons
- Fresh yeast: 40 g
- Wild garlic: 60 g
- Pistachios: 30 g

Preheat the oven to 200 degrees.

Grease the bread pan with oil, place the dough in it, cover, and let it rest for another 30 minutes.

Bake for 45–50 minutes until done, checking with a toothpick. Immediately remove from the mold and let cool.
