Poppy seed stars are charming pastries inspired by Russian traditions. These crispy rolls with a delicate texture and the aroma of fresh yeast captivate from the first bite. The poppy used in the recipe adds a light nutty note and pleasant crunch to the pastry. Shaping the dough into stars makes them visually appealing, while cuts allow for a crispy crust. Mix both types of flour, crumble the yeast into fine crumbs. Add salt, water, and knead the dough. Form a ball from the dough, cover it, and let it rest for 1 hour.
- Wholemeal flour: 300 g
- Wheat flour: 200 g
- Fresh yeast: 10 g
- Salt: to taste
- Water: 350 ml

Place the dough on a surface, divide it into 12 parts, roll into balls, and let it rest for 5 minutes.

Preheat the oven to 250 degrees.

Sprinkle poppy seeds on a plate and fill a shallow bowl with water. Take 1 ball, slightly flatten it, dip it in water, and then roll it in poppy seeds. Press the seeds into the dough. Place it on a floured surface and press down a little more with your hand. Make a diagonal cut in the center: it should go through but not reach the edges. Do the same with two more cross cuts. You should have a snowflake. Then carefully spread the snowflake from the bottom with your fingertips and turn it inside out – it will become a star. Make the other stars and place them on a baking sheet. Cover with a towel and let sit for 45 minutes.

Place the stars in the oven. Spray the oven walls with a sprayer and bake for 10-12 minutes.
