Preheat the oven to 190 degrees.

In a blender, mix thawed and drained spinach, feta, and mascarpone. Whip until smooth and season with pepper to taste. Transfer to a piping bag.
- Frozen spinach: 300 g
- Feta cheese: 230 g
- Mascarpone cheese: 230 g
- Ground black pepper: to taste

Place 1 sheet of dough on a work surface. Brush half of the dough with olive oil, fold it in half, and brush with oil again. Squeeze a strip of spinach filling (about 1 tablespoon) at the edge and carefully roll the dough tightly. Place on a baking sheet and brush the top with olive oil. Repeat the same with the remaining dough and filling.
