Chop the nuts and roast them until golden brown. Grease the baking molds with oil and line with parchment, then add half of the nuts.

Lightly whip the cream. Beat the egg whites with powdered sugar. Add the remaining nuts, liqueur, zest, and fold in the cream. Divide into molds and place in the freezer.

Melt the chocolate in a water bath. Cut 2 strips of parchment (5 cm by 25.5 cm). Pour the chocolate onto the strips. Quickly flip the parfait molds onto the parchment sheet. Wrap the parfait with chocolate strips inside and freeze.

Before serving, remove the parchment, sprinkle with nuts, chocolate, and powdered sugar. Serve with mandarins.
