Moisten the baking tray with cold water, place strips of puff pastry on it at a small distance from each other, and let them thaw for 10 minutes. Then, put the tray in a preheated oven at 200 degrees and bake for about 15 minutes.

Whisk the egg yolks with sugar until fully dissolved. Then mix with flour and gradually add warm coffee. Introduce the mixture into warm milk and heat on low until thickened.

In a separate bowl, beat the soft butter with 2 tablespoons of powdered sugar until creamy. Gradually mix in the cooled cream. Finally, add the cognac.
